Apple, Cheese and Arugula Panini

  1. 8 slices - sandwich bread
  2. 2 tablespoons - extra virgin olive oil
  3. 1/2 pounds - taleggio cheese sliced
  4. 1 - apple peeled and thinly sliced
  5. 1 cups - baby arugula
  6. - salt and pepper


Heat griddle or large skillet over medium heat. Brush 1 side of each bread slice with a little of the oil. Place 4 bread slices oil side down on griddle and layer each with 2 cheese slices, 4 apple slices, 1/4 cup arugula and another cheese slice.

Season with salt and pepper. Top with remaining bread slices, oil side up. Cook on both sides until golden and cheese is melted, about 5 minutes.
