3 cups peeled, cored, and diced golden delicious apples
1 cup pecan pieces
2 ½ cups a/p flour + ½ cup
1 tsp baking soda
1 tsp salt
1 tsp cinnamon
2 cups sugar
1 ½ cups vegetable oil
3 eggs
2 tsp vanilla
Pre heat oven to 325 and prepare 10-12 bundt or tube pan with Bakers Joy or grease and flour.
Combine apples and pecan pieces in ½ cup a/p flour, set aside in bowl.
Combine remaining a/p flour with baking soda, salt, and cinnamon; set aside in bowl.
In large bowl of mixer combine sugar, vegetable oil, eggs and vanilla. Mix 2 minutes. Add flour mixture to sugar mixture. Beat until well combined. Fold in apple mixture.
Spread mixture into prepared pan and bake 80 min, more or less. Remove and cool when tester comes out clean.
