This is a favorite especially in the fall and winter when apples are in season and perfect. I love the arugula peppery taste with the sweet-tart apples, but any leafy lettuce can be used.

Ingredients:
- 1 packages - Arugula Salad
- 6 - apples, any variety
- - crumbled blue cheese
- - sliced almonds or walnuts toasted
- - lime
- 1/2 cups - pomegranate juice (100%)
- 1 tablespoons - Dijon mustard
- 1 tablespoons - honey
- 3/8 cups - olive oil or a little more or less, to taste
Directions:
Wash, dry and pinch off long stems of arugula into a large bowl.
Combine dressing ingredients well with a whisk or in a shaker. Dress the lettuce and set aside.
Cut apples into bite-sized pieces (with skin). Squeeze fresh lime juice over apples and toss well to keep them from turning brown.
Toast almonds or walnuts until lightly brown.
Add apples to arugula and then top with blue cheese and nuts.
