Ingredients:
- 6 - Eggs
- 6 - Dates pitted and roughly chopped
- 2 tablespoons - Rosemary Leaves chopped
- 1/4 teaspoons - Salt
- 1/4 teaspoons - Black Pepper
- 2 tablespoons - Olive Oil
- 1 - Medium Onion peeled and sliced thin
- 2 tablespoons - Unsalted Butter
- 1 - Apple peeled and cut into 1/4-inch thick slices
Directions:
Preheat oven to 500 degrees. Crack eggs into a large bowl. Add dates, 1 tablespoon chopped rosemary leaves, salt and black pepper. Beat lightly.
Heat a 10-inch heavy ovenproof pan over medium heat. Pour in olive oil. After a few seconds add onion. Let cook, stirring rarely, until onions are a deep golden brown and caramelized, about 20 minutes.
Add unsalted butter and apple, and 1 tablespoon chopped rosemary leaves. Sauté until apples begin to brown, 5-7 minutes.
Pour egg mixture over onion-apple mixture. As eggs begin to set, use a rubber spatula to lift edges all around to allow uncooked egg to flow underneath and cook. While frittata's top is still runny, place pan in oven and broil until light brown and fluffy, 3-4 minutes. Season with salt and pepper to taste. Remove frittata from pan and cut into six slices.
