Ingredients:
- 1 packages - active dry yeast
- 1/4 cups - warm water
- 1 cups - flour
- 1 cups - sugar
- 1 cups - milk
- 1 cups - starter
- 1 cups - oil
- 1/2 cups - milk
- 3 - eggs
- 1 teaspoons - vanilla
- 2 cups - flour
- 1 cups - sugar
- 1 1/2 teaspoons - baking powder
- 2 teaspoons - cinnamon
- 1/2 teaspoons - salt
- 1/2 teaspoons - baking soda
- 1 cups - chopped nuts optional
- 1 - large OR 2 small boxes of instant vanilla pudding mix
- - cinnamon and sugar for sprinkling on top
Directions:
For Starter (Day 1):
In a small bowl, dissolve yeast in water; let stand 10 minutes.
In a 2-quart glass, plastic or ceramic (not metal) container, combine flour and sugar; mix thoroughly with a whisk or fork. Slowly stir in milk and dissolved yeast mixture.
Cover loosely or place in large Ziploc bag and let stand at room temperature until bubbly. Consider this Day 1 of 10-day cycle.
Day 2: Do nothing but smoosh the bag.
Day 3: Do nothing but smoosh the bag.
Day 4: Do nothing but smoosh the bag.
Day 5: Do nothing but smoosh the bag.
Day 6: To starter, add 1 cup milk, 1 cup sugar, 1 cup flour; stir with wooden spoon (if in Ziploc bag, smoosh and squish until mixed).
Day 7: Do nothing but smoosh the bag.
Day 8: Stir with wooden spoon (or smoosh and squish to mix).
Day 9: Do nothing but smoosh the bag.
Day 10: Add 1 cup milk, 1 cup sugar, 1 cup flour and stir well. Take 3 portions (1 cup each) and place into Ziploc baggies or glass jars; keep one for yourself if you want, and give others to friends along with the recipe. Then make your loaves of bread with remaining starter.
To make bread:
To remaining 1 cup of starter add oil, milk, eggs and vanilla. Stir well.
In a separate bowl, combine flour, sugar, baking powder, cinnamon, salt, baking soda, nuts (if using) and pudding mix.
Add flour mixture to wet mixture, stirring well with wooden spoon. Pour into 2 large greased and floured loaf pans sprinkled with cinnamon and sugar. Sprinkle cinnamon and sugar on top as well.
Bake at 350 degrees F for 1 hour or until toothpick inserted in center comes out clean.
Variations:
1. Substitute equal parts mashed bananas or applesauce for up to 1/2 of the oil.
2. Use lemon or banana pudding (and lemon or almond extract) in place of vanilla pudding.
Comments:
I have used lowfat milk, applesauce in place of oil, and cut down on some of the final days' sugar to come up with a "healthier" version (with little to no difference in taste or texture). Use your imagination.
