Ingredients:
- 1/3 cups - olive oil
- 2 cloves - garlic finely chopped
- 1 - large onion (6 ounces) thinly sliced and separated into rings
- 1 - eggplant (1 pound) peeled, cut in 1/2-inch cubes
- 4 - small zucchini thinly sliced
- 1 - medium red pepper seeded, cut into thin strips
- 4 - medium tomatoes peeled, quartered
- 1 teaspoons - crushed dried basil
- - salt and pepper to taste
Directions:
In a 3-quart microwave-safe dish, mix together oil, garlic, onion and eggplant. Cover with plastic wrap. Microwave on high for 4 to 5 minutes.
Add zucchini, red pepper, tomatoes, basil and salt and pepper; lightly stir together.
Microwave, covered, at high - stirring once midway - for 5 minutes. Let stand at room temperature for 5 minutes before serving.
