American-style Ratatouille

Ingredients:

  1. 1/3 cups - olive oil
  2. 2 cloves - garlic finely chopped
  3. 1 - large onion (6 ounces) thinly sliced and separated into rings
  4. 1 - eggplant (1 pound) peeled, cut in 1/2-inch cubes
  5. 4 - small zucchini thinly sliced
  6. 1 - medium red pepper seeded, cut into thin strips
  7. 4 - medium tomatoes peeled, quartered
  8. 1 teaspoons - crushed dried basil
  9. - salt and pepper to taste

Directions:

In a 3-quart microwave-safe dish, mix together oil, garlic, onion and eggplant. Cover with plastic wrap. Microwave on high for 4 to 5 minutes.

Add zucchini, red pepper, tomatoes, basil and salt and pepper; lightly stir together.

Microwave, covered, at high - stirring once midway - for 5 minutes. Let stand at room temperature for 5 minutes before serving.
