Notes:
No need for syrup because they are amazing pancakes. Lisa's (Pre Diabetic Support) feedback - I haven't cooked these yet but subbing the almond meal for the regular flour will cut the carbohydrates dramatically. Don't ruin the diabetic friendly recipe with loads of syrup!

Ingredients:
- 1 1/4 cups - water
- 2 - eggs
- 1 1/2 cups - Almond Flour
- 1/2 cups - gluten-free oat flour
- 1/2 cups - millet flour
- 1/2 teaspoons - salt
- 1 teaspoons - baking soda
- 2 teaspoons - almond extract
- 3 tablespoons - honey
- 2 tablespoons - oil
- 1 cups - angel flake coconut
- 1 1/4 cups - water
- 2 - eggs
- 1 1/2 cups - Almond Flour
- 1/2 cups - gluten-free oat flour
- 1/2 cups - millet flour
- 1/2 teaspoons - salt
- 1 teaspoons - baking soda
- 2 teaspoons - almond extract
- 3 tablespoons - honey
- 2 tablespoons - oil
- 1 cups - angel flake coconut
Directions:
In a Large bowl, stir together all ingredients except coconut flakes until batter is smooth. Gently stir in coconut. Ladle pancake batter onto a hot oiled griddle. Turn pancakes when bubbles appear and edges are golden brown. You must use a thin spatula to quickly slide and flip the pancakes because they're so delicate.
