Almond Coconut Pancakes (GF)

Ingredients:

  1. 1 1/4 cups - water
  2. 2 - eggs
  3. 1 1/2 cups - Almond Flour
  4. 1/2 cups - gluten-free oat flour
  5. 1/2 cups - millet flour
  6. 1/2 teaspoons - salt
  7. 1 teaspoons - baking soda
  8. 2 teaspoons - almond extract
  9. 3 tablespoons - honey
  10. 2 tablespoons - oil
  11. 1 cups - angel flake coconut
  12. 1 1/4 cups - water
  13. 2 - eggs
  14. 1 1/2 cups - Almond Flour
  15. 1/2 cups - gluten-free oat flour
  16. 1/2 cups - millet flour
  17. 1/2 teaspoons - salt
  18. 1 teaspoons - baking soda
  19. 2 teaspoons - almond extract
  20. 3 tablespoons - honey
  21. 2 tablespoons - oil
  22. 1 cups - angel flake coconut

Directions:

In a Large bowl, stir together all ingredients except coconut flakes until batter is smooth. Gently stir in coconut. Ladle pancake batter onto a hot oiled griddle. Turn pancakes when bubbles appear and edges are golden brown. You must use a thin spatula to quickly slide and flip the pancakes because they're so delicate.
