Brief Description
During the holiday season as a kid, my family spent a lot of time in the kitchen cooking together and in my case learning how to create various dishes. During Christmas time my mother always baked these cookies as a tradition. I think it was my mother’s way of having family time and fun. Plus these cookies are really fun to create! We had the typical Christmas cookie stencils (i.e. Christmas Trees, Santa, Candy Cane, etc.) We also would add a few sprinkles to give the cookies even more character. These cookies provided a fun filled experience to my sisters and I when it came to baking. We would always make too many, if that’s even a thing, because decorating them was so fun but really it was one of the few times all of my family were together for an extended period of time. The bonding experience with my family was the best part of making these cookies. Also, seeing my dad eat half of a cookie then realize he forgot to get a scoop or two of ice cream and will somehow end up with another cookie in his bowl before he warms up the bowl to slightly melt the ice cream on top of his cookie and a half. Walking around my parents home, the aroma of these Almond Christmas Cookies really creates a nostalgic experience anytime I catch a whiff of almond. The nostalgia of family time, having fun with our creations while capping it off with these delicious Almond Christmas Cookies.

Ingredients:
- 2 cups - Sugar
- 1 cups - Melted Margarine Can be subbed with your choice of butter
- 1 tablespoons - Sour Cream
- 1 teaspoons - Vanilla Extract
- 1 teaspoons - Lemon Juice
- 1 teaspoons - Baking Soda
- 1 teaspoons - Baking Powder
- 3 cups - All-Purpose Flour
- 2 cups - Powdered Sugar
- 1 1/2 teaspoons - Almond Extract
- 1/2 teaspoons - Vanilla Extract
- 1/2 sticks - Melted Margarine Can be subbed with your choice of butter
- 1/4 cups - Water
Directions:
Cookie Instructions:
Pre-heat oven to 350 degrees. Mix all cookie ingredients together in a mixing bowl while adding flour to each rolling section until the dough is not sticky.
Approximately 3 cups of All Purpose Flour (given the cookies are sticky we typically start with 3 cups but it’s good to have an extra 3 cups of flour to help with the rollout of the dough.)
Rollout about 1/8 inch thick. Bake for 10 minutes at 350 degrees. You don’t want these cookies to brown or they will lose their soft touch once cooled.
Frosting Instructions:
Melt the 1/4 stick of margarine. In a separate mixing bowl, mix the butter, water and the rest of the frosting ingredients. The water is used to thin the frosting for spreading. If you want to thin out the frosting a little more add a little extra water to the frosting as needed. You can also use food coloring very scarcely to add a little extra splash of color.
Once the cookies are out of the oven, spread the frosting on the cookies. The frosting is the key for these cookies and will seep through the entire batch to add an pack of flavor. At this point the cookies are done but if you want to have some additional fun, get some sprinkles let your creativity flow.
