All Bran Bran Muffins

Ingredients:

  1. 3 cups - 100% All Bran cereal
  2. 1/2 cups - shortening heaping
  3. 1/2 cups - sugar
  4. 2 whole - eggs well beaten
  5. 2 cups - buttermilk
  6. 2 1/2 cups - flour
  7. 2 1/2 teaspoons - baking soda
  8. 1 teaspoons - salt
  9. 3 cups - 100% All Bran cereal
  10. 1/2 cups - shortening heaping
  11. 1/2 cups - sugar
  12. 2 whole - eggs well beaten
  13. 2 cups - buttermilk
  14. 2 1/2 cups - flour
  15. 2 1/2 teaspoons - baking soda
  16. 1 teaspoons - salt

Directions:

-Pour one cup boiling water over 1 cup of the Bran cereal and set aside to cool.
-Cream together the shortening and sugar.
-Add beaten eggs and buttermilk; stir to combine.
-Add scalded bran along with flour, baking soda, salt and the remaining 2 cups of dry All Bran cereal
-Pour mixture into muffin tins
-Bake for 20 minutes at 400 degrees
