Ingredients:

  1. 10 - chicken tenderloins
  2. 1 tablespoons - vegetable oil
  3. 2 cups - sliced mushrooms about 10-12 mushrooms
  4. 2 tablespoons - butter
  5. - salt and pepper
  6. 8 slices - bacon cooked
  7. 2 cups - shredded Monterey Jack and Cheddar cheese either or both kinds of cheese will work
  8. 2 teaspoons - finely chopped fresh parsley optional, for garnish
  9. 1/3 cups - BBQ sauce
  10. 2 tablespoons - olive oil
  11. 1 teaspoons - seasoning salt or rub

Directions:

Mix together the marinade ingredients and pour over chicken tenderloin pieces in a plastic bag or bowl; cover well and refrigerate for 30 minutes or more.

Preheat the oven to 375° F and heat an ovenproof frying pan with 1 tablespoon of oil over medium heat; sear chicken in the pan for 3-4 minutes per side or until golden brown. (If you don't have an ovenproof frying pan, transfer chicken to a baking dish afterwards). Or heat grill and prepare to cook chicken on the grill for 5-7 minutes 'til browned on both sides. (Grilling is our preferred method). After grilling, transfer chicken to lightly greased baking dish.

While chicken is cooking, in a small frying pan, sauté the mushrooms in the butter. Brush each seared or grilled chicken tenderloin with a little BBQ sauce, saving some to use later for dipping in.

Lay one piece of bacon on each piece of chicken (breaking up as needed, to fit well). Spoon the mushrooms onto the bacon, being sure to coat chicken evenly. Sprinkle cheese over top evenly onto each piece, as desired.

Bake the prepared chicken for 4-6 minutes or until cheese is thoroughly melted and starting to bubble. Sprinkle with parsley before serving, if desired.
