Notes:
Letting the garlic and onion sit after chopping allows it to develop health promoting compounds such as allicin. Because the ingredients are hot when you blend this if you’re using a traditional blender it’s a good idea to cover the lid with a kitchen towel for safety.

Ingredients:
- 1/4 cups - Onion Chopped Nutritional YeastNutritional Yeast
- 2 cloves - Garlic Chopped (or 1/2 tsp. Garlic powder)
- 200 grams - Cauliflower Chopped small (about 2cups)
- 1/2 teaspoons - Salt
- 2 tablespoons - Oil
- 1 1/2 cups - Plant based milk
- 2 teaspoons - Dijon mustard
- 1 tablespoons - Lemon juice
- 1/2 teaspoons - Black Pepper
- 1/2 teaspoons - Oregano
- 1/2 teaspoons - Rosemary
- 1/2 cups - Nutritional Yeast
Directions:
Mince garlic and chop onion first. Allow to sit for 10 to 15 minutes while you prepare the other ingredients. Put all ingredients in a pot and bring to a boil then turn heat down, cover and simmer for 15 minutes. Cauliflower should be very soft at this point. Carefully transfer all to a blender or optionally use an immersion blender to purée the sauce. Serve over your choice of pasta, steamed vegetables and or cooked whole grains.
