Ingredients:
- 8 ounces - cream cheese at room temperature
- 1 cups - shredded pepper jack cheese
- 1 - large egg
- 1/2 cups - frozen corn kernels
- 48 - scoop-shaped tortilla chips one 10-ounce bag
- - chopped chives or cilantro for sprinkling as garnish
Directions:
1. Preheat the oven to 350 degrees F. In a large bowl, mix the cream cheese, pepper jack cheese, egg and corn.
2. Arrange the chips on a large rimmed baking sheet and place 1 teaspoon corn mixture in each. Bake until the filling sets, about 20 minutes.
3. Sprinkle the corn bites with the chives; serve warm.
Give this recipe a twist with one of these variations:
1. Place a fresh or pickled jalapeno slice in the bottom of each chip.
2. Spice up the filling with 1 chopped chipotle chile in adobo sauce and 1 tablespoon of the sauce.
3. Mix salsa, black beans or olive tapenade into the filling.
