Zuppa Toscana - Keto

Ingredients:

  1. 1 pounds - Italian sausage
  2. 5 slices - bacon
  3. 1 bunches - Kale
  4. 3/4 cups - Heavy cream
  5. 5 cloves - garlic
  6. 2 stalks - Cauliflower
  7. 1/4 teaspoons - Pink salt
  8. 1/4 teaspoons - black pepper
  9. 1 - Onion
  10. - Shredded Parmesean
  11. 6 cups - Chicken bone broth

Directions:

Cut up bacon in small pieces and brown. Add sausage to pot and brown. Remove and set aside - leave liquid in pot.

Dice onion and add to pot. Cook 3-5 minutes.
Add garlic, salt and pepper. Cook 2 minutes more.
Add bone broth and chopped cauliflower. Cook about 25 minutes (simmer on medium)
Add chopped kale and cook about 5 minutes until wilted.
Put meat back in and add heavy cream. Cook another 5 minutes.
Serve topped with parmesean.
