Zucchini Lemon Soup with Rice

Ingredients:

  1. 4 tablespoons - long grain rice cooked, for serving
  2. 1 - onion sliced thin
  3. 2 tablespoons - butter
  4. 1 1/4 pounds - zucchini chopped
  5. 1 tablespoons - fresh parsley
  6. - salt and white pepper to taste
  7. 1/2 cups - light cream
  8. 2 tablespoons - grated lemon rind
  9. 5 tablespoons - lemon juice
  10. 1 tablespoons - chervil

Directions:

Saute onion in butter; add zucchini, parsley, salt and pepper. Add 6 cups cold water, cover, and cook for 15 minutes.

Cool and puree. Add remaining ingredients; simmer.

Serve over rice.
