Ingredients:
- 1 - medium onion chopped
- 1 teaspoons - chopped garlic
- 1 cans - large can chicken broth plus maybe 2 more small cans also
- 1 cans - chopped green chilies
- 1 teaspoons - oregano
- 1/2 teaspoons - cayenne pepper
- - salt and pepper
- 32 ounces - Monterrey Jack shredded cheese
- 8 ounces - to 12 oz. sour cream
- 1 - whole chicken cooked, cut into bite size pieces
- 32 ounces - white northern beans undrained
- - flour tortillas or oyster crackers for serving with
Directions:
Saute onion and garlic in olive oil. Add broth, chilies, oregano, cayenne pepper and salt and pepper. Let broth simmer for approximately 1 hour.
Then add cheese and sour cream until totally melted. Add chicken and beans (do not drain) until heated through.
I slice flour tortillas into strips and put in chili or use oyster crackers. The tortillas make it Chicken Tortilla Soup.
