Vegetable Beef Soup

Ingredients:

  1. 1 pounds - cooked ground beef
  2. 3 cups - frozen mixed vegetables (OR 1 can each of carrots, corn and green beans)
  3. 1 - medium chopped onion
  4. 15 - tomato sauce
  5. 2 cups - beef broth
  6. - salt and pepper
  7. 1 tablespoons - oregano
  8. 1 teaspoons - basil
  9. 2 - bay leaves
  10. 1 dashes - red pepper flakes
  11. - sour cream, diced green onion, or Parmesan cheese
  12. - crackers or sourdough bread for serving with

Directions:

In a large soup pot, cook ground beef until almost completely browned; add frozen vegetables and chopped onion and continue cooking until vegetables are crisp-tender.

Stir in the beef broth, tomato sauce and seasonings, and cook over medium heat until cooked through.

Serve soup with a dollop of sour cream and diced green onions or a spoon of Parmesan cheese and your favorite crackers or sourdough bread.
