Ingredients:
- 1 pounds - cooked ground beef
- 3 cups - frozen mixed vegetables (OR 1 can each of carrots, corn and green beans)
- 1 - medium chopped onion
- 15 - tomato sauce
- 2 cups - beef broth
- - salt and pepper
- 1 tablespoons - oregano
- 1 teaspoons - basil
- 2 - bay leaves
- 1 dashes - red pepper flakes
- - sour cream, diced green onion, or Parmesan cheese
- - crackers or sourdough bread for serving with
Directions:
In a large soup pot, cook ground beef until almost completely browned; add frozen vegetables and chopped onion and continue cooking until vegetables are crisp-tender.
Stir in the beef broth, tomato sauce and seasonings, and cook over medium heat until cooked through.
Serve soup with a dollop of sour cream and diced green onions or a spoon of Parmesan cheese and your favorite crackers or sourdough bread.
