Vegan Miso Ramen

Ingredients:

  1. 1 tablespoons - sesame oil
  2. 4 ounces - shiitake mushrooms more if desired
  3. 1 - onion or 2 shallots
  4. 1 tablespoons - ginger peeled and chopped
  5. 2 tablespoons - soy sauce
  6. 3 tablespoons - miso paste
  7. 1 teaspoons - sesame seeds 1/2 tsp-1
  8. 4 cups - vegetable broth
  9. 1 packages - ramen noodles about 8 oz.
  10. 1 - baby bok choy
  11. 1 heads - green onion
  12. 1 packages - grilled tofu optional
  13. 1 packages - roasted seaweed
  14. - crushed red pepper flakes to taste
  15. 1 tablespoons - sesame oil
  16. 4 ounces - shiitake mushrooms more if desired

  18. 1 tablespoons - ginger peeled and chopped
  19. 2 tablespoons - soy sauce
  20. 3 tablespoons - miso paste
  21. 1 teaspoons - sesame seeds 1/2 tsp-1
  22. 4 cups - vegetable broth
  23. 1 packages - ramen noodles about 8 oz.
  24. 1 - baby bok choy
  25. 1 heads - green onion
  26. 1 packages - grilled tofu optional
  27. 1 packages - roasted seaweed
  28. - crushed red pepper flakes to taste

Directions:

1. Combine the onion and ginger in a food processor or high powered blender. Pulse until the ginger and onion is chopped into very small pieces.
2. Heat a large pot with oil on medium heat. Once hot, add the onion and ginger and cook for 3-4 minutes. Add the mushrooms and cook for another minute.
3. Pour the vegetable broth to the pot, and scrap any of the garlic or ginger that might have stuck to the bottom of the pan. Add the soy sauce, miso paste, sesame seeds and stir.
4. Reduce heat to low and bring to a gentle boil. Simmer for 10-15 minutes to develop the flavors.
5. While the miso broth is simmering, cook your ramen noodles according to the back of the package. Drain and set noodles aside.
6. Taste the miso broth and add additional seasoning if needed.
7. Divide noodles into bowls and pour broth on top. Add your ramen topping and serve immediately.
Leftovers can be kept in the refrigerator in an airtight container for 3 days.
