Vanilla Mousse Cheesecake

Ingredients:

  1. 1 1/2 cups - Cinnamon Graham crackers or cookies crushed (about 40 wafers)
  2. 3 tablespoons - Butter melted
  3. 4 packages - 8 oz. each Cream cheese softened, divided
  4. 1 cups - sugar divided
  5. 1 tablespoons - plus 1 tsp. vanilla divided
  6. 3 - Eggs
  7. 8 - Whipped topping thawed

Directions:

1. Heat oven to 325 degrees
2. Mix wafer crumbs & butter; press onto bottom of 9 inch springform pan.
3. Beat 3 pkg. cream cheese, 3/4 Cup sugar & 1 Tbsp. vanilla with mixer until well blended. Add eggs, one at a time, mixing on low speed after each just until blended. Pour over crust.
4. Bake 50 to 55 mins. or until center is almost set. TURN OVEN OFF & LEAVE IN OVEN ANOTHER 30 MINS. Run knife around rim of pan to loosen cake; cool completely in pan.
5. Beat remaining cream cheese, sugar & vanilla with mixer until well blended. Whisk in whipped topping; spread over cheesecake.
6. Refrigerate 4 hour. Remove rim before serving. Garnish with fresh berried if desired.
