Ingredients:

  1. 13 ounces - smoked sausage or Andouille sausage, chopped
  2. 1 pounds - shrimp, seasoned with Cajun or Creole seasoning
  3. 1 cups - rice
  4. 3 - Bay leaves
  5. 3 tablespoons - olive oil
  6. 1 - medium onion, diced
  7. 1/2 - red bell pepper, diced
  8. 1/2 - green bell pepper, diced
  9. 6 cloves - garlic, chopped
  10. 1/2 stalks - celery, diced
  11. 3 cups - to 4 cups chicken broth
  12. 14 ounces - canned crushed or diced tomatoes
  13. 1/2 tablespoons - Cajun seasoning
  14. 1/2 tablespoons - Creole seasoning
  15. 1 teaspoons - dried oregano
  16. 1 teaspoons - dried basil

Directions:

Heat half of the olive oil over medium heat and then add sausage and cook until sausage is browned, 4-5 minutes or so. Remove the sausage from the pan and set aside.

To the same pan, add peppers, onion and celery, and sauté for about 5 minutes until cooked through and tender. Then stir in the chopped garlic and dry seasonings (basil, oregano, Cajun and Creole seasonings) and cook for another minute or so.

Add the rice to the pan and let it toast for a minute or two. Then add the bay leaves and crushed tomatoes and bring to a simmer.

Once the ingredients are simmering, add back in the sausage you had set aside earlier. Bring it to a simmer again, then reduce heat to low, cover and let cook for 15-20 minutes until the rice is tender. Be sure to stir it every few minutes so the rice doesn't stick to the bottom.

Then stir in the shrimp, remove the bay leaves, and cook for 5 more minutes or so until rice is tender and all is cooked through. The liquid should be mostly absorbed by the rice at this point, and then you can remove from heat and serve.
