Ingredients:
- 2 - carrots chopped
- 1 teaspoons - cumin
- 1 teaspoons - salt
- 1 teaspoons - chili powder
- 14 ounces - Ro-Tel (tomatoes & chiles)
- 3 teaspoons - Chalula (like tabasco)
- 4 teaspoons - cilantro chopped
- 9 - corn tortillas cut into strips and fried
- 2 - Avacado sliced
- - Monterrey Jack shredded
- 1 pounds - Chicken cubed
- 40 ounces - Chicken Broth
- 1/4 cups - oil
- 1 - Purple Onion (large) chopped
- 4 cloves - garlic minced
- 6 ribs - celery minced
Directions:
Here we go! Boil the chicken in the broth. Saute onion, garlic, celery in oil until….well….sauteed. Add all the ingredients to the chicken, except the tortillas avacado and cheese, and simmer until the carrots are tender. Serve in a bowl and garnish with cheese and avacado and tortilla strips.
