Ingredients:

  1. 2 - carrots chopped
  2. 1 teaspoons - cumin
  3. 1 teaspoons - salt
  4. 1 teaspoons - chili powder
  5. 14 ounces - Ro-Tel (tomatoes & chiles)
  6. 3 teaspoons - Chalula (like tabasco)
  7. 4 teaspoons - cilantro chopped
  8. 9 - corn tortillas cut into strips and fried
  9. 2 - Avacado sliced
  10. - Monterrey Jack shredded
  11. 1 pounds - Chicken cubed
  12. 40 ounces - Chicken Broth
  13. 1/4 cups - oil
  14. 1 - Purple Onion (large) chopped
  15. 4 cloves - garlic minced
  16. 6 ribs - celery minced

Directions:

Here we go! Boil the chicken in the broth. Saute onion, garlic, celery in oil until….well….sauteed. Add all the ingredients to the chicken, except the tortillas avacado and cheese, and simmer until the carrots are tender. Serve in a bowl and garnish with cheese and avacado and tortilla strips.
