Tortellini & Sausage Soup

Ingredients:

  1. 1 pounds - Italian Sausage
  2. 1 cups - Onion chopped
  3. 2 cloves - Garlic Sliced
  4. 5 cups - Beef Stock
  5. 2 cups - Tomatoes chopped
  6. 1 cans - Tomato Sauce 8 oz
  7. 1 - Carrot thinly sliced
  8. 1 - Zucchini sliced
  9. 1 - Green Pepper diced
  10. 2 tablespoons - Dried Basil
  11. 2 tablespoons - Dried Oregano
  12. 10 ounces - Cheese Tortellini
  13. - Grated Parmesan Cheese
  14. dashes - Chili Powder
  15. 1 pounds - Italian Sausage
  16. 1 cups - Onion chopped
  17. 2 cloves - Garlic Sliced
  18. 5 cups - Beef Stock
  19. 2 cups - Tomatoes chopped
  20. 1 cans - Tomato Sauce 8 oz
  21. 1 - Carrot thinly sliced
  22. 1 - Zucchini sliced
  23. 1 - Green Pepper diced
  24. 2 tablespoons - Dried Basil
  25. 2 tablespoons - Dried Oregano
  26. 10 ounces - Cheese Tortellini
  27. - Grated Parmesan Cheese
  28. dashes - Chili Powder

Directions:

Saute Italian sausage in stock pot over medium-high heat until cooked through, crumbling (10 minutes )
Transfer to large bowl with clotted spoon
Pour off all but 1 Tbsp of drippings from stock pot
Ad onion and garlic and sauté until translucent (5 minutes)
Return sausage to stock pot
Add stock, tomatoes, tomato sauce, zucchini, carrot, bell pepper, basil, and oregano and simmer until vegetables are tender (40 minutes)
Add tortellini and cook until tender (8 minutes)
Season with salt and pepper
Sprinkle with parmesan cheese after ladling into bowls
