Ingredients:
- 2 racks - baby lamb chops (each rack has 7-8 ribs) cut apart
- - red wine vinegar
- - olive oil
- - dried oregano flakes
- - salt and pepper
Directions:
Choose a baking sheet that has an edge and cover with aluminum foil.
Lay out individual baby lamb chops; sprinkle with red wine vinegar and with olive oil.
Season with salt and pepper. Generously apply dried oregano flakes.
Broil for about 3-1/2 minutes until beginning to brown. Turn chops over and return to broiler for finishing, about 3-1/2 minutes more.
Serve 3 baby chops per person. I like to stand them around smashed rosemary potatoes or mashed potatoes.
Optional: Add the hot drippings from the broiled chops to the balsamic vinegar dressing for the Mixed Field Greens Salad with Balsamic Dressing; all of the flavors blend and it is so delicious!
