Tiramisu

Ingredients:

  1. 3 - large eggs
  2. 1/2 cups - heavy cream
  3. 8 ounces - mascarpone cheese
  4. 3/4 cups - sugar
  5. 2 cups - strong coffee or espresso
  6. - Savoiardi lady fingers
  7. 2 tablespoons - Marsala wine
  8. - bittersweet chocolate for shaving and serving with

Directions:

I use metal bowls placed in the freezer prior to preparation for each step.

Bowl 1: Mix 3 egg yolks with 1/2 cup sugar until a thick yellow paste (about 2 minutes; add mascarpone just until combined.

Bowl 2: Mix 3 egg whites until they hold soft peaks. Slowly add 1/4 cup sugar until they hold stiff peaks.

Bowl 3: Mix heavy cream until it forms soft peaks.

Fold cream into mascarpone mixture (gently, but thoroughly). Fold in the egg whites.

Combine coffee or espresso with Marsala wine. Dip ladyfingers (maybe 3-4 seconds) one at a time into mixture. Line the bottom of an 8-x-8-inch pan.

Pour half of the mascarpone mixture on top. Add a second layer of ladyfingers, then add remaining mascarpone mixture.

Let chill in the fridge for at least 6 hours. Add chocolate shavings prior to serving.
