The Best Chicken Tortilla Soup

Ingredients:

  1. 46 ounces - chicken broth
  2. 1 cans - tomato sauce 15 oz
  3. 1 cans - diced tomatoes 15 oz.
  4. 3 cups - shredded cooked chicken Use a rotisserie chicken from your local deli (Costco is my favorite)
  5. 2 - anaheim chilies
  6. 1 - jalapeno pepper diced
  7. 1/2 - yellow onion diced
  8. 4 - large tomatoes diced
  9. 2 cloves - garlic diced
  10. 2 tablespoons - minced cilantro minced
  11. 1 tablespoon - chili powder
  12. 2 teaspoons - cumin
  13. 2 teaspoons - pepper
  14. 1 teaspoons - salt
  15. 2 teaspoons - tabasco sauce
  16. 1/2 teaspoons - chipotle pepper chipotle flavor works well
  17. -
  18. 1 cups - cheddar cheese shredded
  19. 1 - avocado optional
  20. 1/4 cups - cilantro pulled from stem
  21. 1 - lime cut into wedges
  22. 2 cups - tortilla chips

Directions:

Throw everything except the garnishes into the crockpot and let it cook on high for 5-6 hours.

Dress with garnishes and give it a squeeze of lime (a must!) and you're good to go.

If not using a crockpot, saute the garlic and onion in 2 tablespoons of olive oil before adding the remaining soup ingredients; simmer for at least an hour to allow flavors to mix together well before serving.
