Tarte a L'Oignon

Ingredients:

  1. 8 ounces - (1-3/4 cup) flour
  2. - pinch of salt
  3. 4 ounces - butter
  4. - enough cold water to make dough hold together
  5. 1 1/2 pounds - to 2 pounds onions sliced
  6. 2 - eggs beaten
  7. 1 tablespoons - to 2 Tbsp butter
  8. 2 ounces - Gruyere cheese grated

Directions:

Cut the butter into the flour and salt. Add just enough cold water for the dough to hold together. Gather into a ball and let rest while preparing the filling. (Or use any other favorite pastry crust recipe you desire).

For the filling: Melt butter and slowly cook sliced onions, covered, stirring occasionally until soft and tender. Remove from heat and stir in the beaten eggs and cheese.

Roll out the pastry to fit a removable bottom 8 or 9-inch tart pan; fill with the onion mixture and bake 20 to 30 minutes at 375 degrees F.
