Ingredients:
- 6 - 5 oz. skinless chicken breasts
- 6 - green onions finely sliced
- 2 cloves - garlic finely chopped
- - salt and pepper
- 3 tablespoons - light soy sauce
- - PAM cooking spray
- 1 tablespoons - dark soy sauce
- 2 teaspoons - Stevia
- 2 tablespoons - raspberry vinegar
- 1 teaspoons - paprika
- 1/2 teaspoons - Chinese 5 spice powder
- 1/2 cups - sieved or crushed tomatoes
Directions:
Slice the chicken very thinly and place in a shallow oven proof dish. Sprinkle over the green onions and garlic; season well and pour over the light soy sauce. Toss to mix well, cover and marinate in refrigerator for 30 minutes.
Spray a large non-stick skillet with Pam cooking spray and when hot, add the chicken mixture and cook over high heat. Stir and cook for 5-6 minutes and then add dark soy sauce, Stevia, vinegar, paprika, Chinese 5 spice and sieved tomatoes. Stir to mix well and bring the mixture to a boil.
Reduce the heat and cook gently for 3-4 minutes or until chicken is cooked through. Check the seasoning and serve immediately.
