Summer, Corn, Bacon and Potato Chowder

Ingredients:

  1. 1 - Medium uncooked yokon gold potato
  2. - Cooking spray
  3. 1/2 cups - Uncooked celery Chopped
  4. 1/4 cups - Uncooked onion Chopped
  5. 4 pieces - Corn on the cob Kernels removed with a knife
  6. 1 cups - Sweet red pepper Diced
  7. 4 ounces - Uncooked Canadian-style bacon Diced
  8. 2 cups - Fat-free skim milk
  9. 1/2 teaspoons - Table salt
  10. 1/4 teaspoons - Black pepper
  11. 1/8 teaspoons - Hot pepper sauce

Directions:

1. Pierce potato in several places with a fork; microwave on high power until tender, turning over once, about 8 minutes. Allow to cool; peel and mash.
2. Meanwhile, coat a large saucepan with cooking spray. Add celery, onion, corn and red pepper; sauté over medium-high heat for 5 minutes.
3. Stir bacon and milk into saucepan; stir in mashed potato and mix well. Season with salt, pepper, and hot pepper sauce; stir to combine. Cover and simmer 10 minutes (do not allow boiling).
