Feel free to experiment with the spice mix. Ginger is the secret ingredient in this one, but you could also add cocoa powder or allspice. This is one of those dishes that tastes better over time, so I recommend keeping some leftovers. Just add water back in to your desired consistency during reheating. You can use canned beans if you want to skip the soaking overnight step, but keep in mind that there is water weight in the canned beans that is not included in the weight of the dried beans. You can also reduce the amount of oil depending on the fat/lean content of your ground beef.

- 2 pounds - ground beef
- 2 pounds - dried pinto beans
- 1 cans - solid-pack tomatoes 28 oz
- 2 whole - yellow onion sliced
- 1 cups - celery chopped
- 2 cloves - garlic minced
- 1/2 cups - vegetable oil
- 1 1/2 teaspoons - chili powder up to 1 tbsp, to taste
- 1 teaspoons - paprika
- 1/2 teaspoons - ground ginger or more, to taste
- 1/4 teaspoons - cinnamon
- 1/4 teaspoons - ground cloves
- 1 pinchs - turmeric
- - sour cream for garnish
- - shredded cheddar cheese for garnish
- - diced red onions for garnish
- 2 pounds - ground beef
- 2 pounds - dried pinto beans
- 1 cans - solid-pack tomatoes 28 oz
- 2 whole - yellow onion sliced
- 1 cups - celery chopped
- 2 cloves - garlic minced
- 1/2 cups - vegetable oil
- 1 1/2 teaspoons - chili powder up to 1 tbsp, to taste

Directions:
Sort beans to remove any pebbles and soak overnight in cold water in a large pot.
Drain and add fresh water to cover the beans by about 2 inches.
Add onions and simmer for 4 hours, adding water as necessary to keep the beans only just covered and stirring occasionally to ensure the beans don't stick to the bottom.
When the beans have about 1.5 hours left, make the rest of the chili by browning ground beef and minced garlic in the oil in a large pan.
Once browned, add all remaining ingredients and simmer for 1 hour, stirring occasionally.
Once beans are tender, add meat mixture to beans and onions and simmer together for 30-60 minutes.
Serve with your favorite garnish, or try over rice or noodles.
