Steamed Curried Carrots

Ingredients:

  1. 3 cups - peeled carrot pieces or baby carrots
  2. 3 teaspoons - butter
  3. - sea salt to taste
  4. 1/2 teaspoons - freshly grated ginger OR half that amount of ground ginger
  5. 1/2 teaspoons - freshly grated turmeric OR half that amount of ground turmeric

Directions:

Lightly steam carrots in a steamer basket until they are just tender-crisp.

Add butter, salt, and seasonings and toss 'til combined. Either mash the carrots lightly or serve them whole for a healthy side dish.
