Ingredients:
- 1 tablespoons - olive oil
- 2 tablespoons - freshly grated lemon zest
- 1 tablespoons - chopped fresh oregano
- 1/2 teaspoons - kosher salt
- 1/2 teaspoons - black pepper
- 1 pounds - skirt steak cut into 4 pieces
- 5 ounces - frozen brown rice or ready rice prepared according to package directions
- 4 ounces - cherry tomatoes halved
- 1/4 cups - pitted olives
- 1/2 - small diced shallot (about 3 Tbsp)
- 2 tablespoons - fresh lemon juice
- 2 tablespoons - extra virgin olive oil
- 2 tablespoons - chopped fresh oregano
- 1 cloves - garlic minced
- 1/2 teaspoons - kosher salt
- 1/2 teaspoons - black pepper
Directions:
Make steak: Heat olive oil in cast iron skillet over medium-high heat. Cmbine lemon zest, oregano, salt, & black pepper in small bowl. Rub over steak to coat. Add to hot skillet and cook to medium-rare, 4-8 minutes.
Make salad: Prepare rice according to package directions. Combine with remaining ingredients. Slice steak and serve with salad.
