Ingredients:
- 6 cups - to 8 cups baby spinach
- 1/3 - onion finely diced
- 2 cups - sliced strawberries
- 2 slices - bacon
- - bacon fat - about 3/4 Tbsp left in pan after cooking bacon
- 1 tablespoons - olive oil
- 1 tablespoons - lime juice
- 1/4 teaspoons - sea salt
Directions:
In a skillet, cook up the bacon slices and reserve the cooking fat.
Meantime, chop the onion and wash and slice the strawberries.
Place baby spinach in a large bowl.
Make dressing: In same skillet used for bacon, mix together the bacon fat, olive oil, salt and lime juice while bacon fat is still warm. Pour this warm dressing over the spinach and toss together well. Spinach should wilt down a good bit during this process.
Add onion and strawberries to salad bowl with spinach and toss lightly. Crumble cooked bacon over top and serve!
