Spinach Filled Mushrooms

Ingredients:

  1. 16 - to 20 mushrooms 1-1/2 to 2 inches in size
  2. 1 cups - finely chopped onion
  3. 3 tablespoons - butter or margarine
  4. 1 packages - 10 oz. chopped frozen spinach cooked according to pkg directions, drained
  5. 1/2 cups - grated Swiss cheese
  6. - grated Parmesan cheese

Directions:

Remove stems from mushrooms. Chop stems finely and saute with onion in butter until onion is tender but not brown.

Add spinach; stir to mix thoroughly. Add Swiss cheese, stirring lightly. Remove from heat.

Fill mushroom caps with mixture; sprinkle with Parmesan cheese and place on a buttered shallow baking pan.

Bake at 300 degrees F for 15 to 20 minutes. Serve warm.
