Spinach and Orange Salad

Ingredients:

  1. 1 pounds - fresh spinach washed, stems removed
  2. 2 - large naval oranges peeled, diced
  3. 2 tablespoons - olive oil
  4. 2 tablespoons - pinot grigio vinegar
  5. - salt and pepper
  6. 1/4 cups - slivered almonds
  7. 1/4 cups - gorgonzola optional

Directions:

Place spinach in a large bowl with oranges, almonds and gorgonzola.

Add olive oil and toss until well coated. Add vinegar and toss lightly; add gorgonzola last.

Salt and pepper to taste. Enjoy!
