Ingredients:
- 1 - spaghetti squash
- 1 jars - tomato sauce
- 2 - chicken breasts
- 2 - eggs
- 1 tablespoons - milk (or water)
- 1/2 cups - flour
- 1 cups - panko bread crumbs
- 1/4 cups - Parmesan cheese
- - Pam cooking spray
- - salt and pepper to taste
Directions:
Preheat oven to 425 F.
Slice spaghetti squash in half, and remove all seeds from the inside.
Spray squash with cooking spray (on the inside) and season with salt and pepper.
Place squash with the skin facing up on a baking sheet and place in the oven (cook for 40 minutes).
Butterfly chicken breasts.
Place flour in a plate/bowl.
Whip together the eggs and milk in a bowl.
Combine panko bread crumbs, cheese, and salt/pepper in a bowl.
Coat each chicken breast evenly in flour, then dredge in the egg mixture and then the panko bread crumb mixture.
Place all breaded chicken on a baking sheet and spray with Pam cooking spray on both sides.
Bake chicken flipping half way through.
Warm up tomato sauce.
Using a fork shred the spaghetti squash into spaghetti pieces.
Combine spaghetti squash, tomato sauce and cooked chicken to serve.
