Southern Style Green Beans and Potatoes

Ingredients:

  1. 1 tablespoons - olive oil
  2. 1 - onion diced
  3. 2 cloves - garlic minced
  4. 1 1/2 pounds - green beans trimmed and snapped in half
  5. 1 cups - chicken broth
  6. 1 - ham hock or ham bone
  7. - water
  8. 1 pounds - new potatoes quartered
  9. 1 cups - additional ham chopped
  10. - salt
  11. - peper

Directions:

Heat olive oil in a large pot over med heat. Saute onion and garlic until just softened, about 5 mins. Add in the green beans, broth, and ham hock. Add water until it just covers the beans. Bring to a boil and then reduce heat and simmer for 35-45 mins, or until the cooking liquid turns a deep green/brown and beans are well done. 20 mins into simmering, add potatoes and additional ham. Remove ham hock or ham bone, chop ham off the bone, and return to the pot- discarding the bone. Season with salt and pepper to taste.
