Snow Mountain Rice

Ingredients:

  1. 1 cups - water
  2. 1/4 cups - sugar
  3. 1/4 cups - lemon juice
  4. 1/2 teaspoons - salt
  5. 1 cups - minute rice
  6. 1/4 cups - slivered almonds
  7. 1 1/2 cups - whipped cream
  8. 2 cups - summer fruit

Directions:

Bring water, sugar, lemon juice and salt to a boil. Stir in long-grain minute rice right from the box, because you don't have to boil it first. Cover, remove from heat. Let stand 5 minutes. Uncover, stir, cool thoroughly. Meanwhile, sprinkle fruit with enough sugar to sweeten. Let stand while rice is cooling. Then drain fruit, measuring 1/4 cup juice. Add juice to rice along with fruit and nuts. Fold whipped cream into rice mixture.
