Slow Cooker Chicken Taco Stew

Ingredients:

  1. 1 - onion chopped
  2. 1 cans - 16 oz. black beans rinsed, drained
  3. 1 cans - 16 oz. kidney beans rinsed, drained
  4. 1 cans - 16 oz. corn (OR 1/2 bag frozen corn) drained
  5. 1 cans - 8 oz. tomato sauce
  6. 2 cans - diced tomatoes and green chilies
  7. 1 packages - taco seasoning
  8. 2 - boneless, skinless chicken breasts
  9. - grated cheese, sour cream, cilantro or tortilla chips optional toppings

Directions:

Mix everything together in a slow cooker except chicken.

Lay chicken on top and cover.

Cook on low for 6-8 hours or on high for 3-4 hours.

30 minutes before serving, remove chicken and shred.

Return chicken to slow cooker and stir together.

Top with cheese, sour cream, cilantro or tortilla chips, if desired.
