Ingredients:
- 4 - boneless skinless chicken breasts (or equivalent in tenders)
- 2 cans - hominy rinsed and drained
- 3 cups - low sodium chicken broth
- 2 cans - diced tomatoes undrained
- 3 - carrots sliced thin
- 3 - green onions sliced
- 3 cloves - minced garlic
- 1 tablespoons - ground cumin
- 2 teaspoons - chili powder
- 1 teaspoons - oregano (freeze-dried is best)
- 1 teaspoons - salt or to taste
Directions:
Put chicken in bottom of crock pot.  Add all other ingredients on top, stirring to combine.
Cook on high 5-6 hours or low 7-8 hours.
Remove chicken, shred with a fork and return to the pot.
Serve with tortilla chips and shredded cheese of desired.
