Slow Cooked Meatball Soup

Ingredients:

  1. 3 - Medium Carrots Sliced
  2. 2 ribs - Celery Sliced
  3. 1 - Small Onion Chopped
  4. 1 - Bay Leaf
  5. 1 teaspoons - Italian Seasoning
  6. 1/4 teaspoons - Black Pepper
  7. 1 packages - Fully Cooked Meatballs Thawed
  8. 1 cartons - Beef Stock
  9. 2 cans - Italian Diced Tomatoes Undrained
  10. 2 3/4 cups - Water
  11. 3/4 cups - Ditalini or Other Small Pasta
  12. 4 cups - Fresh Baby Spinach
  13. - Grated Parmesan Cheese
  14. 3 - Medium Carrots Sliced
  15. 2 ribs - Celery Sliced
  16. 1 - Small Onion Chopped
  17. 1 - Bay Leaf
  18. 1 teaspoons - Italian Seasoning
  19. 1/4 teaspoons - Black Pepper
  20. 1 packages - Fully Cooked Meatballs Thawed
  21. 1 cartons - Beef Stock
  22. 2 cans - Italian Diced Tomatoes Undrained
  23. 2 3/4 cups - Water
  24. 3/4 cups - Ditalini or Other Small Pasta
  25. 4 cups - Fresh Baby Spinach
  26. - Grated Parmesan Cheese

Directions:

Place first eleven ingredients in a slow cooker. Cook, covered, on low until vegetables are tender and flavors are blended, 5-6 hours.

Stir in pasta; cook covered, on high until pasta is tender, 15-20 minutes. Discard bay leaf; stir in spinach until wilted. Serve with cheese.
