Can substitute 2 cups all-purpose flour for cake flour, if necessary. Do not place batter into greased & floured pans until ready to put into oven. For marble cake: after mixing batter, remove 3/4 cup batter and mix with 2 tablespoons cocoa. Pour vanilla batter into cake pans, then drop chocolate batter into and "knife" swirl in the chocolate batter for a marbled look. For cupcakes: pour batter into paper-lined muffin cups, filling each 1/2 full. Bake 20 minutes.

Ingredients:
- 2 1/4 cups - cake flour
- 1 1/2 cups - sugar
- 3 1/2 teaspoons - baking powder
- 1 teaspoons - salt
- 1/2 cups - shortening
- 1 cups - milk
- 1 teaspoons - vanilla
- 1 teaspoons - almond extract
- 4 - egg whites
Directions:
Heat oven to 350° F. Grease and flour two round 8 or 9-inch baking pans (if you prefer using a 13x9-inch pan, cake ingredients should be doubled).
Measure flour, sugar, baking powder, salt, shortening, 2/3 cup of the milk and the vanilla and almond extract into large mixer bowl. Blend 1/2 minute on low speed, scraping bowl constantly. Beat 2 minutes high speed, scraping bowl occasionally. Add remaining milk and the egg whites; beat 2 minutes high speed, scraping bowl occasionally. Pour into pan(s).
Bake oblong pan for 35-40 minutes, layers for 35 minutes or until wooden pick inserted in center comes out clean. Cool.
Frost with desired frosting.
