Sausage Tortellini Soup

Ingredients:

  1. 1 pounds - sausage (prefers Jimmy Dean)
  2. 2 tablespoons - olive oil
  3. 4 - carrots, peeled and sliced
  4. 1 - medium white onion
  5. 3 - cloves of garlic
  6. 1 pints - chicken broth (64 oz)
  7. 1 cups - water
  8. 3/4 teaspoons - salt
  9. 3/4 teaspoons - pepper
  10. 1 tablespoons - italian seasoning
  11. 1 cans - diced tomatoes (with juices)
  12. 1 cans - cut green beans, drained
  13. 9 ounces - package of tortellini (can use more if desired)
  14. 5 ounces - frozen chopped spinach
  15. 2 tablespoons - fresh lemon juice
  16. - shredded parmesan
  17. 2 tablespoons - olive oil

  22. 1 cups - water
  23. 3/4 teaspoons - salt
  24. 3/4 teaspoons - pepper
  25. 1 tablespoons - italian seasoning
  26. 1 cans - diced tomatoes (with juices)
  27. 1 cans - cut green beans, drained
  28. 9 ounces - package of tortellini (can use more if desired)
  29. 5 ounces - frozen chopped spinach
  30. 2 tablespoons - fresh lemon juice
  31. - shredded parmesan
  32. 1 pounds - sausage (prefers Jimmy Dean)

Directions:

1. Put first 4 ingredients in a large pot and brown the sausage
2. Add garlic and stir for 30 seconds
3. Add water, broth and seasonings and bring to a boil
4. Add tortellini and cook to directions on package or 7 minutes, or until tender. Then add the beans and tomatoes
5. Cook fro 3 more minutes and add the spinach. Cook for 2 minutes and add lemon juice
6. Serve with shredded parmesan
