Ingredients:
- 2 - pastry for 9-inch quiche dish or pie pan
- 1 pounds - hot bulk pork sausage
- 4 ounces - canned sliced mushrooms drained
- 1/2 cups - chopped onion
- 1/4 cups - chopped green pepper
- 2 - eggs
- 1 teaspoons - minced parsley
- 1/2 teaspoons - whole basil leaves
- 1 dashes - granulated garlic
- 1/2 teaspoons - salt
- 3/4 pounds - grated cheddar cheese
- 1 cups - milk
- - paprika
Directions:
Line pans with pastry. Place a piece of buttered aluminum foil, buttered side down, over the pastry. Press foil into the pastry shell. (This keeps side of shell from collapsing). Cover foil with a layer of dry peas.
Bake at 400 degrees F for 10 minutes. Remove pans and foil; prick shell with a fork, and bake another 3 to 5 minutes or until lightly browned. Cool.
Cook sausage and drain. Combine sausage and all seasonings. Divide equally into the two pie shells. Top each with cheese.
Combine milk and eggs; beat until foamy. Pour half of mixture into each shell. Sprinkle with paprika.
Bake at 325 degrees F for 50 minutes or until cheese is lightly browned and quiche is set.
