Notes:
*I find broccoli rabe to be very bitter and prefer a hearty green in this instead. *This freezes great, so make double if you can and freeze it for later!

Ingredients:
- 2 tablespoons - extra-virgin olive oil 2 turns of the pan
- 1 1/4 pounds - Italian hot or sweet sausage ground or taken out of casings
- 1 - medium onion chopped
- 2 - carrots peeled and chopped
- 1 - large potato peeled and chopped into a small dice
- 2 cloves - garlic minced
- 1 - bay leaf
- 2 cans - white beans drained and rinsed
- - Salt and pepper
- 4 cups - chopped kale, escarole or broccoli rabe
- 2 quarts - chicken stock low-sodium
- - Grated fresh Parmesan to pass at table
Directions:
1. Heat medium soup pot over medium-high heat. Add the olive oil and sausage and brown.
2. Add veggies, bay leaf and beans. Season with salt and pepper. Cook mixture 5 minutes to begin to soften the vegetables.
3. Add greens and wilt.
4. Add stock and cover pot.
5. Raise heat and bring soup to a boil. Reduce heat to simmer and cook 15 minutes.
6. Adjust seasonings and serve soup with grated cheese, for topping.
