Rustic Tortellini Soup

Ingredients:

  1. 1 pounds - Italian Sausage
  2. 1 - Medium Onion Chopped
  3. 6 cloves - Garlic Minced
  4. 4 cups - Chicken Stock
  5. 2 cans - Diced Italian Tomatoes Undrained
  6. 1 packages - Refrigerated Cheese Tortellini
  7. 1 packages - Baby Spinach Coarsely Chopped
  8. 3/4 teaspoons - Dried Basil
  9. 1/4 teaspoons - Black Pepper
  10. 1 dashes - Crushed Red Pepper Flakes
  11. - Shredded Parmesan Cheese
  12. 1 pounds - Italian Sausage
  13. 1 - Medium Onion Chopped
  14. 6 cloves - Garlic Minced
  15. 4 cups - Chicken Stock
  16. 2 cans - Diced Italian Tomatoes Undrained
  17. 1 packages - Refrigerated Cheese Tortellini
  18. 1 packages - Baby Spinach Coarsely Chopped
  19. 3/4 teaspoons - Dried Basil
  20. 1/4 teaspoons - Black Pepper
  21. 1 dashes - Crushed Red Pepper Flakes
  22. - Shredded Parmesan Cheese

Directions:

Crumble sausage into a Dutch oven; add onion. Cook and stir over medium heat until meat is no longer pink. Add garlic; cook 1 minute longer. Stir in stock and tomatoes. Bring to a boil.

Add tortellini; return to a boil. Cook for 5-8 minutes or until tender, stirring occasionally. Reduce heat; add the spinach, basil, pepper, and pepper flakes. Cook 2-3 minutes longer or until spinach is wilted and tortellini are tender.

Serve with cheese.
