    This is my favorite chili. I used to make a secondary batch with plant based crumble during Annie's vegetarian years. The fun of chili is to tweak to your personal tastes, so I hope you enjoy this chili and also explore adventurously (hint: chocolate is an amazing add-in). Notable, this recipe is basically the award winning Three A-Holes Chili (Rich, Matt, and Kevin) minus the secret ingredient ;) Love Dad

Ingredients:

  1. 2 pounds - Ground Beef Browned
  2. 2 pieces - Serrano Peppers Fine Diced
  3. 3 pieces - Jalepenos Peppers 1-3 peppers, Diced or Sliced
  4. 1 pieces - Onion, large Diced
  5. 1 pieces - Bell Pepper, large Diced, green is my choice
  6. 3 cloves - Garlic 2-3 cloves, we use jarlic, jarred chopped equivalent
  7. 5 cans - Beans variety 4-5 15 oz. cans, (e.g., dark red and red kidney, red/pinto, black, great northern) drained and rinsed well in colander
  8. 28 ounces - Tomatoes (chefs choice crushed, diced, or petite dice) Large can
  9. 15 ounces - Tomato Sauce Reg can
  10. 6 ounces - Tomato Paste Small can, I usually use about 3/4 can
  11. 1 tablespoons - Paprika Season your meat! enough to coat the beef generously while browning
  12. 1 teaspoons - Salt and Pepper Season your meat! also for beef
  13. 1 tablespoons - Cumin
  14. 1 teaspoons - Cayenne Optional, if peppers are mild or want extra spicy, sometimes use chipotle cayenne for extra smokeyness
  15. 1 teaspoons - Oregano dried
  16. 1 tablespoons - Brown Sugar 1-2 T to taste
  17. 1 tablespoons - Soy Sauce 1-2 T to taste
  18. 4 tablespoons - Chili Powder McCormick 4-5 T to taste

Directions:

Brown ground beef season well with salt and pepper, about half way done coat generously with paprika. When browned drain if excessive grease, set aside.
Depending how much residual grease may need a tablespoon oil then cook onions and bell peppers until soft or less if you prefer. Clear center of pan add a drop of oil then garlic. Cook till just before you smell it maybe 15-30 seconds stir frequently. Add beef back to pan and combine with garlic, onions, bell pepper.
If you started in large skillet transfer to large pot. Also can cook all in large pot. Add Serrano and jalapeño peppers. After rinsing well, add beans. Hold delicate white beans for later.
Stir, cover and cook over medium for maybe 10 minutes. Add tomatoes, tomato sauce, and paste. Use a splash of beer to help dissolve the paste. Add delicate white beans. Stir.
Add chili powder, cumin, oregano, cayenne. Stir.
Add brown sugar and dissolve with soy sauce. Let that melt in a little then stir.
Cover, sometimes slight cracked lid, and let simmer as long you can, at very least half hour but 2-3 hours is great too.

Adjust temp throughout. After tomatoes in, bring up to just simmering and keep lowering temp to maintain. don’t go full boil or it breaks everything down too much.
