Ingredients:
- 4 - ripe papayas peeled, seeded
- 1 - pineapple rind removed, meat halved, cored and cut into chunks
- 1 cups - canned, unsweetened coconut milk
- 1/4 cups - dark rum OR 1/4 cup white creme de cacao
- 1/4 cups - fresh lime juice
- 2 tablespoons - powdered sugar
- 1/2 teaspoons - vanilla extract
- 2 teaspoons - minced fresh lemon grass
- 1/2 teaspoons - Sambal Olek (Indonesian and Malayan chili paste)
- 1/2 cups - banana peeled, sliced
Directions:
In a blender or food processor fitted with metal knife, puree papayas and pineapple in batches.
Add and blend in coconut milk, rum creme de cacao, lime juice, sugar and vanilla.
Pour into a large container and chill for 30 minutes.
Meanwhile, in a medium bowl, mix lemon grass and Sambal Olek; add banana slices and toss to coat.
To serve: top each serving of bisque with a little of the banana mixture.
