Red Chili Jam

  1. 12 - large fresh red chiles
  2. - cider vinegar
  3. 2 - lemons quartered
  4. 3 cups - sugar
  5. - parafin for sealing


Remove stems and seeds from chiles and put through food chopper.

Put in saucepan, cover with water and boil for 5 minutes. Drain.

Cover with vinegar and add lemons. Simmer for 30 minutes.

Remove lemons and add sugar; boil for 10 minutes.

Pour into sterile jars and seal with parafin.
