Quick Minestrone

Ingredients:

  1. 1 - Medium red potato diced
  2. 1 - Medium zucchini diced
  3. 1 - Large onion chopped
  4. 1 cups - Carrots very thinly sliced or shredded
  5. 46 ounces - Vegetable juice if unsalted, add 2 tsp salt
  6. 15 1/2 ounces - Garbanzo beans
  7. 1 tablespoons - Chopped fresh oregano or 1 tsp dried
  8. 6 tablespoons - Parmesan cheese grated
  9. 1 - Medium red potato diced
  10. 1 - Medium zucchini diced
  11. 1 - Large onion chopped
  12. 1 cups - Carrots very thinly sliced or shredded
  13. 46 ounces - Vegetable juice if unsalted, add 2 tsp salt
  14. 15 1/2 ounces - Garbanzo beans
  15. 1 tablespoons - Chopped fresh oregano or 1 tsp dried
  16. 6 tablespoons - Parmesan cheese grated

Directions:

1. Combine all ingredients, except cheese, in a large saucepan.
2. Bring to a boil, reduce heat and simmer, partially covered, 10-15 minutes or until vegetables are tender.
3. Top each serving with 1 tablespoon Parmesan cheese.
