Ingredients:
- 1 - Medium red potato diced
- 1 - Medium zucchini diced
- 1 - Large onion chopped
- 1 cups - Carrots very thinly sliced or shredded
- 46 ounces - Vegetable juice if unsalted, add 2 tsp salt
- 15 1/2 ounces - Garbanzo beans
- 1 tablespoons - Chopped fresh oregano or 1 tsp dried
- 6 tablespoons - Parmesan cheese grated
- 1 - Medium red potato diced
- 1 - Medium zucchini diced
- 1 - Large onion chopped
- 1 cups - Carrots very thinly sliced or shredded
- 46 ounces - Vegetable juice if unsalted, add 2 tsp salt
- 15 1/2 ounces - Garbanzo beans
- 1 tablespoons - Chopped fresh oregano or 1 tsp dried
- 6 tablespoons - Parmesan cheese grated
Directions:
1. Combine all ingredients, except cheese, in a large saucepan.
2. Bring to a boil, reduce heat and simmer, partially covered, 10-15 minutes or until vegetables are tender.
3. Top each serving with 1 tablespoon Parmesan cheese.
