Ingredients:
- 2 - Deep Dish Pie Crusts Heat in oven according to pie crust instructions for 8 minutes or so, to toast the shell.Put to the side.
- 2 tablespoons - butter
- 1/2 cups - scallions Finely chopped
- 1/2 cups - Green Pepper Finely chopped
- 1 tablespoons - minced garlic
- 1 cans - evaporated milk (12 oz)
- 1 cans - Cream Of Mushroom Soup
- 6 - eggs slightly beaten
- 2 tablespoons - flour
- 2 cups - Broccoli Florets
- 2 cups - swiss cheese grated
- 1 cups - ham steak finely diced
Directions:
Pre Heat the oven for pie crusts and toast them according to directions on Pie Crust packaging. (TIP:Put beans on bottom for weight so pie crust does not bubble on bottom.)
Have oven ready at 350 degrees to put pies in.
Saute butter, scallions and onions on medium heat, stirring until veggies are soft.
Beat 6 eggs slightly, add soup, evaporated milk, and flour..... mix in sauteed veggies with butter. Mix and set aside.
Layer the diced ham, broccoli and cheese in each of the pie crusts and then pour egg mixture over the top..... TIP: Use a fork or knife to work egg mixture down into pie crust.
Put pies on baking sheets and bake at 35o Degrees for 50 minutes or so. pull out and let sit for 15 minutes. Slice and serve.
