Portabella & Olive Oil Pasta

Ingredients:

  1. 8 ounces - Pasta of choice
  2. 1 cups - Baby Portabella mushrooms Sliced
  3. 3 tablespoons - Ottavio Gran Reserve Spanish EVOO
  4. 1 cups - Fresh spinach
  5. 1/2 cups - Grated Parmesan cheese
  6. - Salt, to taste
  7. - Pepper, to taste

Directions:

Cook pasta according to pkg., drain and set aside. While pasta is cooking, in a lrg. saute pan add 2 T Olive Oil and heat over med. high heat. Ad the mushrooms and saute for 3-4 min.; toss in spinach, stirring until wilted. Combine the pasta w/ the oil mix and toss gently. Season w/ salt & pepper to taste and top w/ the Parmesan cheese and remaining olive oil.
