Ingredients:
- 8 ounces - Pasta of choice
- 1 cups - Baby Portabella mushrooms Sliced
- 3 tablespoons - Ottavio Gran Reserve Spanish EVOO
- 1 cups - Fresh spinach
- 1/2 cups - Grated Parmesan cheese
- - Salt, to taste
- - Pepper, to taste
Directions:
Cook pasta according to pkg., drain and set aside. While pasta is cooking, in a lrg. saute pan add 2 T Olive Oil and heat over med. high heat. Ad the mushrooms and saute for 3-4 min.; toss in spinach, stirring until wilted. Combine the pasta w/ the oil mix and toss gently. Season w/ salt & pepper to taste and top w/ the Parmesan cheese and remaining olive oil.
